Tasks/ Job Duties: Prepare and present sushi and sashimi; Prepare customized sushi menus using the daily fresh fish; Prepare dishes for customers with food allergies or intolerances; Train new staff in preparation, cooking and handling of food including preparation of fish and seafood for sashimi and sushi as well as side dishes; Instruct sushi cooks in preparation, cooking, garnishing and presentation of food; Maintain and order inventory, records of food, supplies, equipment.
